Do we need a seating plan if we serve a plated dinner for our wedding?

Our venue has the option of a plated meal or buffet and I think I'm leaning towards the plated dinner. The options are more appealing and there are about six plates to choose from which is actually more selection that the buffet. I am concerned about logistics though. We were not planning on having a seating plan so then how do the wait staff know who gets what? Do we then need a seating plan? Is there a way around this?
